A couple of things to note: 1. Grating sweet potatoes is a bitch. Seriously. Just throwing that out there, 2. I used almonds instead of cashews, so I might have to try this a few different ways. I also think walnuts would be a tasty option. Let me know if you work something in there that ends well!
